GParted refreshes itself auto when an action has been completed & won't let the user close it (greyed out) until it's finished, and yes, all volumes are shown correctly in it.
Tried a manual refresh when I hadn't performed any actions, no difference.
Seen that link before too, and have tried that solution with no luck.
I know that's the file that gets locked with the command sudo chattr +i ~/.config/xfce4/desktop/icons* which is so far the only way I've found to keep everything 100% where it's put.
As it's only the volume icons affected now, not every icon on the desktop, and only when using Gparted I don't think I'll waste any more time on it.
If I stumble across a solution or what's causing it on my setup I'll make sure to post what I've found.
