Hello,
this confusions does not exists in the Menus of Linux Lite.
Yes LXTerminal is the one to use, it is also the terminal reached via the terminal panel icon, hence that is the chosen one by the developers for users due to its ease of accessibility.
Terminal from you screenshot, also opens LXterminal.
Root I imagine? - opens LXTerminal as root, or you can open LXTerminal and then take Root.
Xterm is the standard XWindow Terminal. Minimal look, more advanced features.
UX the phrase itself is to do with User eXperience of something, eg; UX designer design things that are user friendly.
UXTerm is XTerm with Unicode character support (according to Google search)
Ubuntu classifies this type of topic as for "Super Users", of which I am not, or remotely near to, I am nearer to the opposite end of the scale of users LOL. So you may likely get some more concise, and more advanced replies.

These other terminals get pulled in as dependencies of other programs. It's unavoidable. Just ignore it and use LXTerminal.

I'd add to the reminder that you can use any terminal you like -- just make sure you keep LXTerminal as the default terminal or updates will get messed up.
