Velvetta works best in my opinion. I guess you could try and add milk or cream to hard cheese to get a
soupy texture to the sauce. I don't know though. I never tried that.

Of course, homemade cheese sauce is best, but to speed up the whole process somewhat, if you have a warehouse store nearby, they may have premade cheese sauce in large cans - either mild or wild...
