There is no direct way to change the DE back and forth.
Linux Lite is designed specifically to work flawlessly with the XFCE DE. See the Linux Lite manual.
Installing any other DE lacks the proper support.
You probably tested other distro that provides the tools to manage multiple DEs.
It is not the case with LL.
However, if you like testing different DEs with Linux Lite, that means you are ready for anything.
In this case, you should work using low level backups (CloneZilla).
It's faster than the standard installation, especially if you use a SSD media.
But as I can guess, you are still at the beginning of this journey so, the only thing you can do, based on the info you provided, is to reinstall Linux Lite from the boot media you used initially.
I highly recommend you to read thoroughly through the manual (it's on your machine, for now):

As for the "going back to XFCE", if you are "the taugh stuff" kind, you might try the following CLI command:

sudo apt remove mate-desktop-environment
This removes the MATE installation, leaving you with the initial XFCE.
The downside is that some residual files will still remain on the computer.
That is why I recommended the clean install.
