It is (still) possible to "install" linux lite to 16gb or bigger usb instead of using live version with persistence. Live version is simply not optimized to your purpose! install linux lite to other usb stick with your stick and if possible unplug your HDD/SSD before install to prevent any unwanted changes and be VERY careful.
