Hi Steve,
If you really want to go into the deep end, you might even consider installing a bootloader manually on your USB stick after formatting it with the partition(s)/filesystems you want. I've done some extensive tests some time ago and enjoy having solutions on hand that allow me booting more than one distribution from that little USB stick I've got in my wallet. And whenever possible I directly boot from the ISO files that are all nicely placed in a sub directory.
So, if you're bored, there would be lots to play around with
