May I assume that if I download an older ISO that is no longer supported that the version available has no further updates? In other words has all the updates in it prior to losing support?

The dates on the ISO files tie in with the actual release dates.
This would imply that the ISO files don't have any of the patches that accumulate over the supported life of the release. This is reflected in the installation process which offers the option to download updates during the install.
