Is there any way to remove/disable the log-out option leaving only reboot and shutdown......?.

You can't. The only way around it is to for example write a Yad script and use it as a replacement for the default dialogue. Then on Whiskermenu, point Log Out to that script. I could program one for you but I'd have to charge for it.
