Change Sound Output by Hand

I had to connect my Linux Lite desktop computer to the tv with hdmi, and apparently Linux Lite doesn't change sound output automatically. I was able to fix that, but now I want the sound to play from the speakers again, how do I do that?

In Volume Control, in the Configuration tab, there are about a million choices. How do I know which one is my set of speakers, that are currently plugged in?

I choose the Configuration profile at the top of the list when I disconnect from an HDMI device.

Alright, any particular reason for choosing the top alternative? I chose some other alternative, audio sounds fine to me, I just want to know what alternative I "should" pick.

On my laptop, the top option is the default one (for me).  When I connect the laptop to a television via an HDMI connection, I choose the first HDMI option (the third one from the top for me).  When I disconnect the laptop from the television, I just remember to change my sound configuration profile back to the default one (for me) which is the one at the top of the list.
