I'm not an expert on encryption and have only experimented a few times with it myself, but I remember seeing posts like this in Mint forums before. From what I can remember, if you check both to install with full disk encryption and also encrypt Home folder that can cause problems. There really isn't any need to check encrypt Home folder if you're already going to have full disk encryption. When choosing that you're basically having the installer try to create one layer of encryption within another layer of encryption. Installer seems to choke when you try that and even if/when it does succeed, the result is a pretty sluggish performance because of the multiple encryption layers. Also, when checking both encrypt options, the other common problem was incorrect application and operation of cryptswap.
Would recommend you re-install again and this time just tell it to use full disk encryption without additionally checking the box to encrypt Home.
